One thing I noticed from watching the Dakar and looking at the one pic of Depres on this link, is that these top riders "attack" posistion is quite different to what we are taught. They stand more "jockey like" if I can put it that way.
It could just be that they are locking their knees more because of the long distances. But head over the handlebars is correct.
I also saw a discussion about how the bike is quite loaded with fuel and water, and riding in sand the riders sit well back to keep the front light.

In Derrick's defence, I saw another biker displaying Derrick's strange culinary skills last weekend, and after an audience vote on the end, erm, product, it was apparently rather tasty?!
